I thought i'd post the photos of preparing my first attempt at a wedding cake, and the recipe for the cream between the layers.
You may also get some tips for creating (and keeping fresh and alive) a cake-top flower arrangement like this one.
This cake is a four layer, vanilla buttercake, with mascarpone vanilla bean cream layers, left naked.
Enjoy the pics, and making mascarpone cream :)
Mascarpone vanilla bean cream
500ml heavy whipping cream
1/3 cup icing sugar
2 tsp vanilla bean paste or 2 vanilla pods
Pour the chilled cream into a large bowl and beat with a hand held electric mixer until it looks like it is just beginning to become thick. Add the mascarpone, and beat in to the cream until combined. Add the icing sugar and vanilla bean paste (if using pods scrape the pod clean with a sharp knife).
Continue to beat until the cream is whipped, and holds on the beater when lifted out of the beaten cream. Don't over beat! We don't want butter :)
