Kingfish Ceviche
Made at home
Despite being rather fancy, i promise this is super easy to do at home. It is a very healthy and extremely tasty snack or canapé.

Serves 4
Ingredients
0.5kg fresh kingfish
3 limes
1 lemon
1 tsp salt
Fresh chilli, finely chopped (measure depending on how hot you like things)
3 tbsp fresh fennel tops, chopped
3 tbsp fresh mint leaves, chopped
3 tbsp fresh coriandar, chopped
Water crackers or thinly sliced sourdough to serve
Method
Remove kingfish fillet from skin and ensure bones are removed. Dice the fish into 1cm cubes.

In a bowl, add 1 tsp salt, the juice of the limes and lemon, and the chilli to the diced fish. Ensure the fish is covered by the juice.
Cover in gladwrap and refrigerate for at least 3 hours. Every hour, stir the fish in the juice.

When you are ready to have the fish, remove from the fridge and carefully spoon the fish pieces into a bowl, leaving the juice behind. Stir through the fresh herbs.

Serve with water crackers or thinly sliced sourdough.
You can keep the Ceviche covered, in the fridge, marinating in the citrus juices for up to 24 hours.
