100g unsalted butter, room temperature and broken up into pieces
1 egg yolk
1/2 whole egg
Combine sifted flour, sugar and salt in a bowl. Combine milk and yeast, and stir with your finger until the yeast and milk looks light tan and milky. Make a well in the dry ingredients, and pour in the rest of the ingredients. Mix with your hands until the butter is gooey and through the flour. Turn onto the bench and press the dough against the bench until it begins to become glossy. Try to get to this stage without over working the dough. It should take about 5 minutes. Place in a bowl and cover loosely with glad wrap. Place in a warm place - the oven heated to 40°C and then turned off is perfect. Leave for 2 hours until the dough has risen.
Now you are ready to make the buns...
To make the tops of the burger buns, take small bits of dough and roll into balls - for sliders take truffle sized bits, roll and place on a greased oven tray. For the bases of the burgers, take slighty smaller bits of dough, roll in balls, and then squish them flat onto the oven tray.
Using a brush, egg wash each bun with 1 egg whisked in with 1 tspn milk.
Optional: Sprinkle top buns with sesame seeds - i used black sesame
Let to prove for 30 minutes in a warm place, then cook at 180°C for 20 minutes or until golden brown.
Cool on a wire rack.
