I thought i'd post the photographs of Saturday's cake making effort. Let's just say i'm happy Saturday is behind me, and in hindsight i can appreciate the challenge that was making a Wedding cake and a Birthday Cake in one morning, which began at 4am.
I am by no means a baker, i just bake because i love it, so these had their imperfections which i'll try to iron out next time...
HeBefore making this, i had never tasted Pumpkin Pie. And to be completely honest, i had significantly large reservations about the idea. But, it was Miles' birthday, and this is what he requested for his cake!
I can tell you, i was very pleasantly surprised. In fact, i L O V E pumpkin pie!

This is a cupcake recipe with spice, quite literally. If you haven't heard of Galangal, it is a Thai ginger root that has a spicy citrus flavour. The spice, combined with sweet, tea soaked dates and finished with a salted buttercream really does get the salivary glands pumping.
Note you need a food processor for this recipe, as the galangal is very hard.
